Instructions
- Heat oils and cook chicken mixture: In a large cast iron skillet, heat vegetable oil and toasted sesame oil over medium-high heat. Add ground chicken, diced shiitake mushrooms, diced carrot, and diced shallot. Sauté until the chicken is browned and vegetables are tender, about 5 to 7 minutes. Drain any excess fat from the skillet.
- Add aromatics: Stir in the minced garlic and freshly grated ginger. Cook for about 1 minute until fragrant, stirring constantly to avoid burning.
- Incorporate sauces and cilantro: Add hoisin sauce, chili garlic sauce, and fish sauce to the skillet. Stir well to combine and heat through for about 30 seconds. Remove the skillet from heat and stir in the chopped fresh cilantro.
- Prepare peanut sauce: In a small bowl, whisk together creamy peanut butter, reduced sodium soy sauce, lime juice, brown sugar, chili garlic sauce, and grated ginger. Add 2 to 3 tablespoons of water gradually to achieve your preferred sauce consistency.
- Assemble and serve: Spoon the warm chicken mixture into the center of butter lettuce leaves. Drizzle generously with the prepared peanut sauce. Serve immediately as a fresh, hand-held wrap.
Notes
- You can substitute ground turkey for chicken if preferred.
- If shiitake mushrooms are not available, cremini or button mushrooms work well.
- Adjust chili garlic sauce to your heat preference or omit for milder flavor.
- For a gluten-free version, ensure hoisin sauce and soy sauce are gluten-free.
- These wraps can be prepped ahead; store chicken mixture and peanut sauce separately and assemble just before serving.
