Ingredients
Scale
Fruit
- 2 medium ripe pears, peeled, cored, and diced
Dry Ingredients
- 1 ½ cups (190 grams) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cardamom
- ¼ teaspoon salt
- 1 cup (200 grams) granulated sugar
Wet Ingredients
- 2 large eggs
- ½ cup (115 grams) unsalted butter, melted and slightly cooled
Optional
- Powdered sugar for dusting
Instructions
- Prepare the Ingredients: Peel, core, and dice the pears into small pieces. Measure out the flour, sugar, baking powder, cardamom, salt, and other ingredients to have everything ready.
- Mix Wet Ingredients: In a large mixing bowl, whisk together the granulated sugar and melted butter until the mixture is smooth and creamy. Add the eggs one at a time, whisking well after each addition to ensure full incorporation.
- Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, ground cardamom, and salt. Gradually add this dry mixture into the wet ingredients, stirring gently until just combined to avoid overmixing. Then fold in the diced pears evenly into the batter.
- Bake the Batter: Pour the batter into a prepared baking pan—greased or lined with parchment paper—and spread it evenly. Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few crumbs.
- Cool and Serve: Allow the cake bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Optionally, dust with powdered sugar for a delicate finish. Once cool, cut into bars and serve.
Notes
- Using ripe, juicy pears adds natural sweetness and moisture to the bars.
- Do not overmix the batter after adding flour to keep the texture tender.
- If pears are very juicy, lightly pat them dry to prevent excess moisture in the batter.
- You can substitute cardamom with cinnamon if desired for a different spice profile.
- Store leftover bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
