Description

Pecan Pie Lasagna is a decadent no-bake dessert layering rich cream cheese mixture, sweet and buttery pecan pie flavored syrup, and no-bake lasagna noodles, creating a unique and indulgent treat perfect for holiday gatherings or special occasions.

Ingredients

Scale

No-Bake Lasagna Layer

  • 1 package of no-bake lasagna noodles

Cheesecake Mixture

  • 1 cup heavy cream
  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whipped topping

Pecan Pie Syrup Mixture

  • 2 cups chopped pecans
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup corn syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Optional Topping

  • 1/2 cup chocolate chips (optional)

Instructions

  1. Prepare Noodles: Prepare the no-bake lasagna noodles according to package instructions, then set them aside to cool completely.
  2. Make Cheesecake Mixture: In a medium mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped topping until well combined and creamy. Set aside.
  3. Cook Pecan Syrup: In a saucepan over medium heat, melt the butter. Add brown sugar, corn syrup, cinnamon, and salt. Stir continuously and let the mixture simmer gently for 3-5 minutes until the sugar dissolves and the syrup thickens slightly.
  4. Add Pecans: Stir in the chopped pecans, coating them well with the syrup. Cook for another 1-2 minutes, then remove the saucepan from heat and allow the mixture to cool slightly.
  5. Assemble Layers: Spread a thin layer of the cheesecake mixture evenly on the bottom of a 9×13 inch dish. Lay a layer of no-bake lasagna noodles over the cheesecake mixture. Then, spread a layer of the pecan syrup mixture on top of the noodles.
  6. Repeat Layers: Continue layering by repeating the cheesecake mixture, noodles, and pecan mixture layers, finishing with the remaining cheesecake mixture spread on top.
  7. Chill: Cover the dish tightly with plastic wrap and refrigerate the lasagna for at least 4 hours or overnight. This chilling time allows the layers to set and flavors to meld beautifully.
  8. Add Topping and Serve: Before serving, sprinkle the top with chocolate chips if desired for added flavor and texture. Slice into portions and serve chilled.

Notes

  • Ensure lasagna noodles are fully cool before assembly to avoid melting the cream cheese mixture.
  • The dessert can be made a day ahead and refrigerated overnight to enhance flavor.
  • Use whipped topping that holds shape well for best texture.
  • Chocolate chips are optional but add a nice contrast and visual appeal.
  • Store leftovers covered in the refrigerator for up to 3 days.
