Instructions
- Prepare Ingredients: Peel and chop the pineapple into small chunks. Put on gloves to handle the habaneros safely, then stem and seed the peppers. Chop the onion and garlic if you are using them.
- Sauté Aromatics: Warm the olive oil in a saucepan over medium heat. Add the chopped onion and cook for 4 to 5 minutes until it becomes soft and translucent. Add the garlic and sauté for an additional 1 minute until fragrant.
- Blend the Sauce: Transfer the pineapple, habaneros, vinegar, lime juice, honey or sugar if using, salt, and the sautéed onion and garlic into a blender. If adding optional spices such as cumin, smoked paprika, or fresh cilantro, include them now. Blend everything until the sauce is smooth.
- Simmer the Sauce: Pour the blended mixture back into the saucepan and simmer over medium heat for 15 to 20 minutes. Stir occasionally and allow the sauce to thicken slightly. If the sauce becomes too thick, add a little water or extra vinegar to reach your desired consistency.
- Adjust Flavor: Carefully taste the hot sauce and adjust sweetness, heat, or tanginess according to your preference. To achieve a smoother texture, you can blend the sauce briefly again after adjustments.
- Cool and Store: Let the sauce cool for 10 to 15 minutes. Pour it into sterilized jars or bottles.
- Refrigerate: Store the pineapple habanero hot sauce in the refrigerator. It will keep well for up to 3 months.
