- 1/2 cup old-fashioned rolled oats
Almond Milk Mixture:
- 1/2 cup unsweetened almond milk (or milk of choice)
- 1/4 cup canned pumpkin puree
- 2 tablespoons plain Greek yogurt
- 1 tablespoon chia seeds
- 1 tablespoon maple syrup
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon vanilla extract
- pinch of salt
Optional Toppings:
- chopped pecans
- granola
- a drizzle of maple syrup
- a dollop of Greek yogurt
Instructions
- Combine Ingredients: In a jar or container, mix oats, almond milk, pumpkin puree, Greek yogurt, chia seeds, maple syrup, pumpkin pie spice, vanilla extract, and salt.
- Refrigerate: Cover and refrigerate overnight or for at least 4 hours.
- Stir & Serve: In the morning, stir well and adjust consistency with milk if desired. Top with pecans, granola, or additional syrup.
