Ingredients
Scale
Chicken and Seasoning
- 4 boneless, skinless chicken fillets
- 1 packet ranch dressing mix (about 1 oz)
Liquids and Dairy
- 1 cup chicken broth
- 1 cup cream cheese (softened)
- 1 cup shredded cheddar cheese
Garnish
- 1/2 cup diced green onions
Instructions
- Prepare the crockpot: Place the 4 boneless, skinless chicken fillets evenly in the bottom of the crockpot to create a base layer for the dish.
- Add seasoning: Sprinkle the entire packet of ranch dressing mix evenly over the chicken fillets to infuse them with flavor.
- Add chicken broth: Pour 1 cup of chicken broth over the chicken and ranch seasoning to provide moisture and help cook the chicken slowly.
- Cook low and slow: Cover and cook the chicken on low heat for 6 to 7 hours, or alternatively on high heat for 3 to 4 hours, until the chicken is tender and fully cooked through.
- Add cheeses: About 30 minutes before the end of cooking, add 1 cup of softened cream cheese and 1 cup of shredded cheddar cheese to the crockpot. Stir gently to combine and allow the cheeses to melt into a creamy sauce.
- Stir and combine: Continue cooking until the cheese is fully melted and the sauce is smooth and well incorporated with the chicken.
- Garnish and serve: Just before serving, sprinkle 1/2 cup of diced green onions over the top for a fresh and colorful finish.
Notes
- For a thicker sauce, remove the lid during the last 20 minutes of cooking to allow some liquid to evaporate.
- Serve this dish over rice, mashed potatoes, or with steamed vegetables for a complete meal.
- You can substitute shredded mozzarella or pepper jack cheese for a different flavor profile.
- If you prefer spicy, add a pinch of cayenne pepper to the ranch seasoning before cooking.
- Leftovers keep well in the fridge for up to 3 days and reheat nicely in the microwave or stovetop.
