Red Velvet Cake
- 1 box Red Velvet cake mix (plus eggs, oil and water as per package directions)
Cream Cheese Filling
- 2 blocks (8 ounces each) cream cheese, softened
- 3/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 cups heavy whipping cream
Fruit Topping
- 2 cups blueberries
- 1 cup strawberries, halved
Instructions
- Prepare Cake: Follow the package directions to prepare and bake the red velvet cake using two 9-inch round cake pans. Ensure to grease the pans thoroughly for easy removal. Allow the cakes to cool completely before assembling.
- Make Cream Cheese Filling: In a large bowl, beat together the softened cream cheese and granulated sugar using an electric hand mixer. Add vanilla extract and heavy whipping cream, then continue beating until the mixture becomes thick, creamy, and well combined.
- Assemble First Layer: Place one cooled cake layer at the bottom of a large trifle dish. Spread half of the cream cheese filling evenly over the cake layer. Arrange a single layer of blueberries on top of the filling.
- Assemble Second Layer and Garnish: Place the second cake layer over the blueberries. Spread the remaining cream cheese filling over this top layer. Garnish with the halved strawberries and a few additional blueberries.
- Chill and Serve: Cover the trifle dish and refrigerate the dessert until it is well chilled and ready to serve, allowing the flavors to meld beautifully.
