Ingredients
Scale
Filling
- 1 cup pulled pork
- 1/2 cup coleslaw
- 1/2 cup shredded cheddar cheese
Wrapper and Frying
- 1 package egg roll wrappers (about 12-15 wrappers)
- Oil for frying (vegetable or canola oil, enough for deep frying)
Instructions
- Prepare the filling: In a medium bowl, combine 1 cup of pulled pork, 1/2 cup of coleslaw, and 1/2 cup of shredded cheddar cheese. Mix gently until evenly distributed.
- Lay out wrapper: Place one egg roll wrapper flat on a clean surface in a diamond shape with one corner pointing toward you.
- Add filling: Spoon about 2-3 tablespoons of the pulled pork mixture into the center of the wrapper, ensuring not to overfill to allow proper sealing.
- Wrap the egg roll: Fold the bottom corner over the filling, then fold both side corners inward snugly. Roll tightly upward towards the top corner, sealing the edge with a little water to prevent opening during frying.
- Heat oil: Pour oil into a deep pan or skillet to a depth of about 1-2 inches. Heat over medium heat until the oil reaches approximately 350°F (175°C).
- Fry egg rolls: Carefully place the wrapped egg rolls seam side down into the hot oil. Fry in batches to avoid overcrowding and cook for about 3-4 minutes per side, turning occasionally, until all sides are golden brown and crispy.
- Drain and serve: Remove the fried egg rolls with a slotted spoon and drain on paper towels to remove excess oil. Serve warm with your favorite dipping sauce.
Notes
- Ensure the oil is hot enough before frying to prevent soggy egg rolls.
- Use pulled pork that is not too wet to avoid soggy wrappers.
- Adjust frying time as needed depending on size and thickness of rolls.
- These egg rolls can be served with barbecue sauce, ranch, or spicy mustard for extra flavor.
- For a lighter version, consider baking instead of frying, though texture will differ.
