Instructions
- Blend the base: Place the peeled and chopped cucumbers, fresh lemon juice, granulated sugar, and 1 cup of cold water into a blender. Blend until the mixture is completely smooth, ensuring all the cucumber pieces have been pureed thoroughly.
- Strain the mixture: Pour the blended liquid through a fine mesh strainer into a large pitcher. Use a spoon or spatula to press the pulp, extracting as much juice as possible from the cucumber and lemon mixture for maximum flavor.
- Mix with remaining water: Add the remaining 3 cups of cold water to the strained juice and stir well. Taste the lemonade and adjust the sweetness by adding more sugar or acidity by adding extra lemon juice if desired.
- Add mint and chill: Incorporate the packed fresh mint leaves into the pitcher, then cover and refrigerate for at least 30 minutes. This resting time allows the mint flavor to infuse and the lemonade to chill.
- Serve: Serve the cucumber lemonade over ice cubes in glasses, garnished with fresh cucumber and lemon slices for an extra refreshing presentation.
