- Marinate watermelon: Place the watermelon slices into a Ziploc bag. Add lemon juice, chopped mint leaves, balsamic vinegar, and honey. Seal the bag and mix gently to coat the watermelon evenly. Refrigerate overnight to allow the flavors to infuse deeply into the watermelon.
- First layer assembly: On a serving plate, place one slice of the marinated watermelon. Top it with 2 teaspoons of crumbled feta and sprinkle with one chopped mint leaf for freshness.
