Description

Rhubarb Fool is a classic British dessert featuring tangy cooked rhubarb gently folded into lightly sweetened whipped cream, creating a luscious, marbled treat perfect for spring and summer gatherings.

Ingredients

Scale

Rhubarb Mixture

  • 4 cups fresh rhubarb, chopped
  • ¾ cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract

Whipped Cream

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • ½ teaspoon lemon zest (optional)

Instructions

  1. Cook Rhubarb: In a saucepan over medium heat, combine the chopped rhubarb, granulated sugar, and water. Cook for 10–15 minutes, stirring occasionally, until the rhubarb breaks down and becomes soft and jammy. Remove from heat.
  2. Add Vanilla and Chill: Stir in the vanilla extract into the hot rhubarb mixture. Allow it to cool completely, then place the mixture in the refrigerator to chill thoroughly.
  3. Whip Cream: In a separate bowl, whip the heavy cream with the powdered sugar until soft peaks form, ensuring lightness and volume in the cream.
  4. Fold Rhubarb and Cream: Gently fold the chilled rhubarb mixture into the whipped cream, creating a swirled, marbled effect without fully combining them.
  5. Serve and Garnish: Spoon the rhubarb fool into serving glasses and chill for at least 30 minutes before serving. Optionally, garnish with lemon zest for a fresh citrus aroma.

Notes

  • Adjust the sugar depending on the tartness of the rhubarb.
  • You can substitute part of the rhubarb with strawberries for a sweeter variation.
  • Do not overmix to maintain the signature marbled look.
