Sausage and Vegetables
- 1 lb Italian sausage (mild or hot, casings removed)
- 1 medium onion, diced
- 1 bell pepper (any color), diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
Rice and Seasonings
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste

- Fresh parsley, chopped (for garnish)
Instructions
- Cook the sausage. Heat olive oil in a large skillet over medium heat. Add the Italian sausage, breaking it into crumbles as it cooks. Continue cooking until browned and no longer pink inside. Remove sausage from the skillet and set aside.
- Sauté the vegetables. In the same skillet, add diced onion and bell pepper. Sauté for about 5 minutes until softened. Add minced garlic and cook for an additional 1 minute until fragrant.
- Add the rice. Stir the long-grain white rice into the skillet, coating it well with the oil and vegetables to toast slightly.
- Add liquids and seasonings. Pour in the chicken broth and drained diced tomatoes. Mix in the dried oregano, dried basil, crushed red pepper flakes if using, and salt and black pepper to taste.
- Simmer the dish. Return the cooked sausage to the skillet and stir to combine all ingredients. Bring the mixture to a boil, then reduce heat to low. Cover the skillet with a lid and let it simmer gently for 18–20 minutes until the rice is tender and has absorbed the liquid.
- Finish and serve. Once cooked, fluff the rice gently with a fork. Garnish with freshly chopped parsley and serve hot as a flavorful, complete meal.

- Use mild or hot Italian sausage based on your spice preference.
- Drain the diced tomatoes well to prevent excess liquid making the dish too watery.
- Crushed red pepper flakes are optional for adding heat.
