Description

Delicious and healthy roasted cauliflower steaks served with a vibrant garlic herb sauce, perfect for a satisfying vegetarian meal or side dish.

Ingredients

Scale

Cauliflower Steaks

  • 1 large head of cauliflower
  • 3 tablespoons olive oil
  • Salt – to taste
  • Pepper – to taste

Garlic Herb Sauce

  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for roasting the cauliflower steaks.
  2. Prepare Cauliflower Steaks: Remove the leaves from the cauliflower and trim the stem. Carefully slice the cauliflower into 1-inch thick steaks.
  3. Season Steaks: Place the cauliflower steaks on a baking sheet. Drizzle with 2 tablespoons of olive oil and season with salt and pepper to taste.
  4. Roast: Roast the cauliflower steaks in the preheated oven for 25-30 minutes, flipping halfway through cooking to ensure even browning and tenderness.
  5. Make Garlic Herb Sauce: In a small bowl, combine minced garlic, chopped parsley, chopped thyme, lemon juice, and the remaining 1 tablespoon of olive oil. Mix well to blend the flavors.
  6. Serve: Once the cauliflower steaks are roasted, remove them from the oven and drizzle the garlic herb sauce generously over the top. Serve warm.

Notes

  • Use a sharp knife to slice cauliflower steaks to avoid breaking them apart.
  • For extra flavor, you can sprinkle some grated Parmesan on the steaks before roasting.
  • Leftover cauliflower steaks can be refrigerated and eaten cold or reheated.
  • This dish pairs well with grilled meats or as a main course for vegetarians.
