Description

Roasted Harissa Cauliflower is a flavorful and spicy dish that makes a perfect side or main. The cauliflower is coated in a mixture of harissa paste, olive oil, and spices, then roasted until crispy on the outside and tender on the inside. Serve with a squeeze of lemon juice for a deliciously tangy finish.

Ingredients

Scale

Main Ingredients:

  • 1 large head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1–2 tablespoons harissa paste (adjust to heat preference)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Garnish and Serving:

  • Chopped fresh parsley or cilantro, for garnish (optional)
  • Lemon wedges, for serving

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the Cauliflower: In a large bowl, mix olive oil, harissa paste, lemon juice, garlic powder, cumin, salt, and pepper. Add cauliflower florets and toss to coat.
  3. Roast the Cauliflower: Spread the cauliflower on the baking sheet in a single layer. Roast for 25–30 minutes, flipping halfway through, until crispy and browned.
  4. Finish and Serve: Remove from the oven, sprinkle with fresh herbs if desired, and serve with lemon wedges.

Notes

  • Harissa paste can vary in spiciness, so adjust according to your preference.
  • This dish pairs well with couscous, rice, or as part of a Mediterranean grain bowl.
  • Leftover cauliflower is great for salads or wraps.
