Description

Roasted Lemon Pepper Chicken is a flavorful and easy-to-make main course featuring juicy bone-in chicken thighs or drumsticks seasoned with lemon pepper, garlic, and fresh lemon juice. Roasted to perfection in the oven, this dish offers crisp golden skin and tender meat, making it a perfect weeknight dinner or special meal paired with roasted vegetables, rice, or a fresh salad.

Ingredients

Scale

Chicken and Marinade

  • 2 pounds bone-in chicken thighs or drumsticks
  • 2 tablespoons olive oil
  • 1 tablespoon lemon pepper seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced

For Garnish

  • 1 tablespoon fresh parsley, chopped
  • Lemon slices for garnish

Instructions

  1. Preheat and prepare: Preheat your oven to 400°F (200°C) and lightly grease a baking dish or sheet pan to prevent sticking.
  2. Prepare the chicken: Pat the chicken pieces dry with paper towels. Place them in a large bowl to prepare for seasoning.
  3. Season the chicken: Drizzle olive oil over the chicken. Add lemon pepper seasoning, garlic powder, onion powder, salt, black pepper, fresh lemon juice, lemon zest, and minced garlic. Toss the chicken thoroughly to coat each piece evenly with the flavorful mixture.
  4. Arrange the chicken: Place the seasoned chicken pieces in a single layer in the prepared baking dish, ensuring they are spaced for even roasting.
  5. Roast the chicken: Roast in the preheated oven for 35 to 40 minutes until the chicken is cooked through, the skin is golden and crispy, and the internal temperature reaches 165°F (74°C).
  6. Rest and garnish: Remove the chicken from the oven and allow it to rest for a few minutes. Sprinkle chopped fresh parsley over the top and garnish with lemon slices before serving.

Notes

  • For crispier skin, place the chicken under the broiler for the final 2 to 3 minutes of cooking.
  • Boneless chicken thighs or breasts can be used but will require slightly less cooking time.
  • This dish pairs wonderfully with roasted vegetables, steamed rice, or a fresh green salad for a complete meal.
