- 4 Dried Shiitake Mushrooms (rehydrated and diced)

- 1 tbsp Sesame Oil (or vegetable oil)
- 1 tbsp Garlic Oil (optional)

Instructions
- Preparation: Gather all ingredients and prep vegetables by dicing the carrot, green onions, and rehydrated shiitake mushrooms.
- Prepare Spice Mixture: Use a mortar and pestle to pound the coriander roots, black peppercorns, and fresh garlic cloves together until finely ground, releasing their aromas.
- Make Filling: In a blender, combine ground pork, egg, Golden Mountain Sauce, white sugar, oyster sauce, and cornstarch. Blend until smooth and well combined.
- Combine Ingredients: Transfer the blended pork mixture to a large bowl. Add the crushed spice mixture, diced carrot, green onions, and shiitake mushrooms. Mix thoroughly to distribute flavors evenly.
- Shape Dumplings: Place a dumpling wrapper on a spoon, fill it with about one tablespoon of the filling. Moisten the edges with water, then fold and pinch to seal securely, forming the dumpling shape.
- Steam Dumplings: Line a steamer basket with parchment paper to prevent sticking. Arrange dumplings with some space between them. Steam over boiling water for about 10 minutes until fully cooked and juicy.
- Serve: Carefully remove dumplings and transfer to serving plates. Drizzle with sesame oil or garlic oil if desired. Garnish with crispy fried garlic and serve hot for the best flavor.
