Description

  • 6 oz large shrimp, peeled and deveined
  • 2 large eggs, beaten

Vegetables & Aromatics

  • 2 cloves garlic, minced
  • 1 small white onion, diced
  • 2 stalks green onions, chopped (separate white and green parts)

Rice & Sauces

  • 3 cups cooked jasmine rice, cold and day-old
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil

  • 2 tablespoons neutral oil (canola or avocado)

Instructions

  1. Prepare Ingredients: Slice the cooked steak into bite-sized pieces. Pat the shrimp dry with paper towels to remove excess moisture. Beat the eggs in a bowl. Chop the white onion, garlic, and separate the white and green parts of the green onions.
  2. Scramble Eggs: Heat 1 tablespoon of the neutral oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and scramble them gently until just set but still moist. Remove the eggs from the pan and set aside to prevent overcooking.
  3. Cook Shrimp: Add the shrimp to the hot pan and sear each side for 1 to 2 minutes until just cooked through and opaque. Avoid overcooking to maintain their tenderness. Remove and set aside with the eggs.
  4. Sear Steak: Quickly sear the steak pieces in the pan just to warm them up and develop some caramelization on the surface. This adds depth of flavor. Remove and set aside with other proteins.
  5. Sauté Aromatics: Add the diced white onion to the pan and sauté for about 1 minute until beginning to soften. Stir in the minced garlic and the white parts of the chopped green onions. Cook until fragrant, about 30 seconds, taking care not to burn the garlic.
  6. Fry Rice: Add the remaining tablespoon of neutral oil along with the cold, day-old jasmine rice to the pan. Use a spatula or wooden spoon to break apart any clumps and stir-fry for 4 to 5 minutes until the rice is heated through and slightly crisp on the edges.
  7. Combine Ingredients: Return the scrambled eggs, cooked shrimp, and steak to the pan with the rice and aromatics. Pour in the soy sauce and oyster sauce, if using. Stir well to coat all the ingredients evenly with the sauces and blend flavors together.
  8. Finish Seasoning: Drizzle the sesame oil over the fried rice mixture and mix thoroughly. Taste and season with salt and freshly ground black pepper according to preference.
