Description

Delight in these Shrimp Spinach Stuffed Pasta Rolls, a perfect blend of succulent shrimp, fresh spinach, and creamy cheeses baked inside jumbo pasta shells and topped with marinara sauce and melted mozzarella. This comforting baked pasta dish is ideal for a flavorful family dinner or a special occasion.

Ingredients

Scale

Pasta

  • 12 jumbo pasta shells

Filling

  • 1 cup cooked shrimp, chopped
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded (for filling)
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Sauce and Topping

  • 2 cups marinara sauce (divided)
  • 1/2 cup mozzarella cheese, shredded (for topping)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the stuffed pasta shells.
  2. Cook Pasta Shells: Boil the jumbo pasta shells according to the package instructions until al dente. Drain them carefully and set aside to cool slightly.
  3. Prepare Filling: In a mixing bowl, combine the chopped cooked shrimp, chopped spinach, ricotta cheese, half the mozzarella cheese, grated Parmesan cheese, egg, garlic powder, and Italian seasoning. Stir everything well until fully incorporated.
  4. Stuff Shells: Carefully stuff each cooked pasta shell with the shrimp and spinach mixture, making sure they are well-filled but not overflowing.
  5. Arrange in Baking Dish: Spread 1 cup of marinara sauce evenly on the bottom of a baking dish. Place the stuffed shells side by side in the dish in a single layer.
  6. Add Sauce and Cheese: Pour the remaining 1 cup of marinara sauce over the arranged shells. Then sprinkle the remaining mozzarella cheese evenly on top for a cheesy crust.
  7. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the sauce is bubbly and the cheese on top is melted and slightly golden.

Notes

  • For best results, use fresh spinach and fully cooked shrimp.
  • Feel free to substitute shrimp with cooked chicken or sausage for variation.
  • Make sure to not overcook pasta shells before stuffing to prevent them from breaking.
  • This dish can be prepared ahead and refrigerated before baking.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
