Ingredients
Scale
Macaroni
- 8 oz elbow macaroni
Cheese Sauce
- 2 cups shredded cheddar cheese
- 1 cup shredded smoked gouda
- 2 cups milk
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika
- 1/4 tsp garlic powder
Instructions
- Cook the macaroni: Boil the elbow macaroni according to the package directions until al dente, then drain thoroughly and set aside.
- Melt the butter: In a medium saucepan, melt the butter over medium heat to prepare the base for the roux.
- Make the roux: Stir in the all-purpose flour along with salt, black pepper, smoked paprika, and garlic powder into the melted butter to create a smooth paste. Cook for about 1-2 minutes to remove the raw flour taste.
- Add the milk: Gradually pour in the milk while constantly stirring to avoid lumps. Continue stirring until the sauce thickens to a creamy consistency.
- Incorporate the cheese: Remove the saucepan from heat and stir in the shredded cheddar and smoked gouda cheeses gradually until completely melted and smooth.
- Combine macaroni and cheese sauce: Mix the cooked macaroni into the cheese sauce ensuring every piece is coated well. Then transfer the mixture into a baking dish.
- Smoke or bake: Either smoke the dish or bake it in a preheated oven at 350°F (175°C) for 25-30 minutes until the top is bubbly and golden brown.
Notes
- For a stronger smoky flavor, use a smoker and wood chips such as hickory or applewood during the smoking step.
- Ensure to stir the sauce constantly when adding milk to prevent lumps.
- You can substitute smoked gouda with smoked cheddar or another smoked cheese if preferred.
- Leftovers reheat well in the oven or microwave, adding a splash of milk to loosen the sauce if needed.
