Description

This Smoked Macaroni and Cheese is a decadent twist on the classic comfort food. Featuring a creamy blend of cheddar and smoked gouda cheeses enveloped in a rich, seasoned sauce, then baked or smoked to bubbly, golden perfection, this dish offers smoky depth and irresistible flavor. Perfect for gatherings or a cozy family dinner, it combines traditional stovetop preparation with the option of finishing in the smoker or oven.

Ingredients

Scale

Macaroni

  • 8 oz elbow macaroni

Cheese Sauce

  • 2 cups shredded cheddar cheese
  • 1 cup shredded smoked gouda
  • 2 cups milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder

Instructions

  1. Cook the macaroni: Boil the elbow macaroni according to the package directions until al dente, then drain thoroughly and set aside.
  2. Melt the butter: In a medium saucepan, melt the butter over medium heat to prepare the base for the roux.
  3. Make the roux: Stir in the all-purpose flour along with salt, black pepper, smoked paprika, and garlic powder into the melted butter to create a smooth paste. Cook for about 1-2 minutes to remove the raw flour taste.
  4. Add the milk: Gradually pour in the milk while constantly stirring to avoid lumps. Continue stirring until the sauce thickens to a creamy consistency.
  5. Incorporate the cheese: Remove the saucepan from heat and stir in the shredded cheddar and smoked gouda cheeses gradually until completely melted and smooth.
  6. Combine macaroni and cheese sauce: Mix the cooked macaroni into the cheese sauce ensuring every piece is coated well. Then transfer the mixture into a baking dish.
  7. Smoke or bake: Either smoke the dish or bake it in a preheated oven at 350°F (175°C) for 25-30 minutes until the top is bubbly and golden brown.

Notes

  • For a stronger smoky flavor, use a smoker and wood chips such as hickory or applewood during the smoking step.
  • Ensure to stir the sauce constantly when adding milk to prevent lumps.
  • You can substitute smoked gouda with smoked cheddar or another smoked cheese if preferred.
  • Leftovers reheat well in the oven or microwave, adding a splash of milk to loosen the sauce if needed.
  • This recipe serves 6 as a side dish or 4 as a main course.
