Instructions
- Make Raspberry Syrup: In a medium saucepan, combine 1 cup of fresh raspberries with 1 cup of granulated sugar. Heat over medium heat, stirring gently until the sugar dissolves and the raspberries begin to break down, about 5-7 minutes.
- Strain Raspberry Mixture: Remove the saucepan from heat once the mixture is bubbling and the raspberries are soft. Strain the mixture through a fine mesh strainer into a bowl, pressing the raspberries to extract as much liquid as possible. Set aside the syrup to cool to room temperature or refrigerate for 15-20 minutes to speed cooling.
- Prepare Lemon Juice: Roll each lemon on the countertop using your palm to loosen the juice. Cut in half and use a citrus juicer to extract the juice from the lemons, removing any seeds. Measure out 1 cup of freshly squeezed lemon juice.
- Mix Lemonade: In a large pitcher, combine the cooled raspberry syrup and the fresh lemon juice. Stir well to combine.
- Add Sparkling Water: Pour 4 cups of chilled sparkling water into the pitcher and gently stir to mix without losing the carbonation.
- Serve: Fill glasses with ice cubes, pour the sparkling raspberry lemonade into each glass about three-quarters full.
- Garnish and Enjoy: Garnish each glass with fresh mint leaves, a few raspberries, and a slice of lemon. Serve immediately for best flavor.
