Description

This Spiced Carrot & Date Loaf with Maple Cream is a moist and flavorful cake perfect for a comforting dessert or special snack. The combination of grated carrots, sweet dates, and warm spices creates a deliciously tender loaf, complemented perfectly by a luscious maple-infused whipped cream. Ideal for cozy gatherings or a delightful treat any time of day.

Ingredients

Scale

For the Loaf

  • 1 cup (150g) pitted dates, chopped
  • 1 cup (240ml) boiling water
  • 1 tsp baking soda
  • 1 cup (130g) grated carrots
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar
  • 2 large eggs
  • 1 1/4 cups (160g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • Pinch of salt

For the Maple Cream

  • 1 cup (240ml) heavy cream
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a loaf pan well and line it with parchment paper to prevent sticking and ensure easy removal of the loaf.
  2. Combine Dry Ingredients: In a medium bowl, sift together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and a pinch of salt. This ensures even distribution of leavening agents and spices.
  3. Soak the Dates: Place the chopped dates in a bowl and pour over the boiling water. Add baking soda to the mixture and let it soak while you prepare the rest, allowing the dates to soften and blend easily into the batter.
  4. Cream Butter and Sugar: In a large mixing bowl, use a hand mixer or stand mixer to cream the softened butter and brown sugar until the mixture is light and fluffy, which will give the loaf a tender texture.
  5. Add Eggs: Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. This helps maintain the batter’s structure and prevents curdling.
  6. Mix in Carrots and Dates: Fold the grated carrots and soaked dates (with the soaking water) into the wet mixture, ensuring an even distribution throughout the batter.
  7. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring gently just until everything is combined. Avoid overmixing to keep the loaf tender and moist.
  8. Bake the Loaf: Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  9. Prepare Maple Cream: While the loaf bakes, whip the heavy cream in a chilled bowl until soft peaks form. Gently fold in the maple syrup and vanilla extract to create a sweet, aromatic topping.
  10. Cool and Serve: Once the loaf is done, remove it from the oven and allow it to cool slightly in the pan before transferring to a wire rack. Serve slices with a generous dollop of the maple cream on top for a perfect finish.

Notes

  • Make sure to soak the dates in boiling water with baking soda to hydrate them fully and enhance their sweetness.
  • Do not overmix the batter after adding the dry ingredients to avoid a dense loaf.
  • The loaf can be stored in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
  • The maple cream topping is best added just before serving to keep it fluffy and fresh.
  • You can substitute all-purpose flour with whole wheat flour for a healthier option, but expect a denser texture.
