Description

These Spicy Chickpea Patties are a flavorful and healthy vegetarian dish inspired by Middle Eastern cuisine.   • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1/4 cup rolled oats
  • 1/4 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1 small jalapeño, seeded and finely chopped
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg, beaten
  • 2 tablespoons olive oil, for cooking

Instructions

  1. Prepare the Chickpea Mixture: In a food processor, pulse the rinsed and drained chickpeas along with the rolled oats until they are coarsely blended but not pureed to keep some texture in the patties.
  2. Mix Ingredients: Transfer the chickpea and oat mixture to a mixing bowl. Add the finely chopped red onion, minced garlic, chopped jalapeño, fresh cilantro or parsley, lemon juice, ground cumin, smoked paprika, cayenne pepper if using, salt, black pepper, and the beaten egg. Stir everything well until the mixture holds together.
  3. Form Patties: Use your hands to shape the mixture into 6 small, evenly sized patties to ensure they cook uniformly.
  4. Cook Patties: Heat the olive oil in a nonstick skillet over medium heat. Place the patties in the skillet and cook for 3 to 4 minutes on each side or until they are golden brown and crisp on the outside.
  5. Serve: Serve the patties warm. They pair beautifully with yogurt sauce, can be stuffed into pita bread, or served over a fresh salad for a wholesome meal.

Notes

  • To make this recipe vegan, replace the egg with a flax egg made from 1 tablespoon ground flaxseed mixed with 3 tablespoons water.
