Description

This Strawberry Jello Poke Cake is a delightfully moist and flavorful dessert featuring a classic white cake base punctured with a shimmering strawberry jello filling, topped with a creamy layer of cool whip and garnished with fresh sliced strawberries. Perfectly chilled, this cake combines the lightness of whipped topping with the sweet tang of strawberry gelatin for a refreshing treat ideal for gatherings or special occasions.

Ingredients

Scale

Cake Ingredients

  • 1 box (15 ounces) white cake mix (along with eggs, oil, and water as called for on the cake mix package)

Jello Mixture

  • 1 box (3 ounces) strawberry jello mix
  • 1 cup boiling water

Topping and Garnish

  • 1 container (8 ounces) cool whip, thawed
  • Sliced strawberries (for garnish)

Instructions

  1. Prepare and bake the cake: Follow the instructions on the white cake mix package to prepare the batter using the required eggs, oil, and water. Pour the batter into a 9×13 inch baking pan and bake as directed. Once done, remove the cake from the oven and let it cool for 30 minutes.
  2. Poke holes in the cake: Using the back of a wooden spoon, gently poke holes all over the surface of the cooled cake to allow the jello mixture to seep in.
  3. Make and pour the jello mixture: Stir together the strawberry jello powder and 1 cup of boiling water until completely dissolved. Carefully pour this liquid evenly over the entire cake, ensuring it seeps into the holes. Cover the pan and refrigerate the cake for a few hours to set and chill.
  4. Top and serve: When ready to serve, spread the thawed cool whip evenly over the top of the cake. Cut the cake into 12 pieces and garnish each serving with fresh sliced strawberries. Enjoy your refreshing strawberry jello poke cake!

Notes

  • Make sure the cake is warm but not hot before poking holes to avoid tearing.
  • Use a wooden spoon for poking holes as it creates larger holes for better jello absorption.
  • Allow the cake to chill for at least 3-4 hours for the best flavor and texture.
  • For added flavor, you can macerate the sliced strawberries with a little sugar before garnishing.
  • This cake can be made a day ahead and stored covered in the refrigerator.
