Ingredients
Scale
For the Shortcakes
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter (cold)
- 1 cup heavy cream
- 1 tsp vanilla extract
For the Strawberries
- 1 lb fresh strawberries
For the Whipped Cream
- 1 cup heavy cream (plus extra for whipping)
- 1–2 tbsp granulated sugar (to taste)
Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) to prepare for baking the shortcakes.
- Prepare the strawberries: Rinse the fresh strawberries thoroughly and slice them. Set aside to use as topping later.
- Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt to evenly combine them.
- Incorporate the butter: Cut the cold unsalted butter into the dry ingredients using a pastry cutter or fingers until the mixture resembles coarse crumbs, ensuring a tender texture for the shortcakes.
- Combine wet ingredients: In a separate bowl, mix the heavy cream with vanilla extract. Slowly add this mixture to the dry ingredients, gently mixing until just combined to form the dough.
- Form and bake the shortcakes: Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, leaving space between each. Bake in the preheated oven for 15-20 minutes or until they turn golden brown and a toothpick inserted in the center comes out clean.
- Prepare the whipped cream: While shortcakes bake, whip the additional heavy cream with granulated sugar until soft peaks form, creating a light and fluffy topping.
- Assemble and serve: Once baked, allow the shortcakes to cool slightly. Serve warm topped generously with sliced strawberries and a dollop of freshly whipped cream for a delicious dessert experience.
Notes
- Ensure the butter is very cold to achieve a flaky, tender shortcake texture.
- Do not overmix the dough to avoid tough shortcakes.
- You can macerate the strawberries with a little sugar for 10-15 minutes to bring out their juices for a juicier topping.
- Adjust the sweetness of the whipped cream according to your taste.
- Serve shortcakes warm for the best flavor and texture.
