Description

A classic Strawberry Shortcake recipe featuring tender, buttery shortcakes topped with fresh strawberries and homemade whipped cream. Perfect for a delightful dessert or special occasion treat, combining sweet, juicy berries with fluffy, golden shortcakes and light, creamy topping.

Ingredients

Scale

For the Shortcakes

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (cold)
  • 1 cup heavy cream
  • 1 tsp vanilla extract

For the Strawberries

  • 1 lb fresh strawberries

For the Whipped Cream

  • 1 cup heavy cream (plus extra for whipping)
  • 12 tbsp granulated sugar (to taste)

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) to prepare for baking the shortcakes.
  2. Prepare the strawberries: Rinse the fresh strawberries thoroughly and slice them. Set aside to use as topping later.
  3. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt to evenly combine them.
  4. Incorporate the butter: Cut the cold unsalted butter into the dry ingredients using a pastry cutter or fingers until the mixture resembles coarse crumbs, ensuring a tender texture for the shortcakes.
  5. Combine wet ingredients: In a separate bowl, mix the heavy cream with vanilla extract. Slowly add this mixture to the dry ingredients, gently mixing until just combined to form the dough.
  6. Form and bake the shortcakes: Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, leaving space between each. Bake in the preheated oven for 15-20 minutes or until they turn golden brown and a toothpick inserted in the center comes out clean.
  7. Prepare the whipped cream: While shortcakes bake, whip the additional heavy cream with granulated sugar until soft peaks form, creating a light and fluffy topping.
  8. Assemble and serve: Once baked, allow the shortcakes to cool slightly. Serve warm topped generously with sliced strawberries and a dollop of freshly whipped cream for a delicious dessert experience.

Notes

  • Ensure the butter is very cold to achieve a flaky, tender shortcake texture.
  • Do not overmix the dough to avoid tough shortcakes.
  • You can macerate the strawberries with a little sugar for 10-15 minutes to bring out their juices for a juicier topping.
  • Adjust the sweetness of the whipped cream according to your taste.
  • Serve shortcakes warm for the best flavor and texture.
