For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
For the strawberry swirl:
- 1 cup fresh or frozen strawberries, hulled
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 325°F. Line a 9-inch springform pan with parchment paper and lightly grease the sides.
- To make the crust, combine graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture firmly into the bottom of the pan. Bake for 10 minutes, then set aside to cool.
- To make the strawberry swirl, cook strawberries, sugar, and lemon juice in a small saucepan over medium heat until soft and syrupy, about 8–10 minutes. Blend until smooth and let cool.
- For the filling, beat cream cheese and sugar together until smooth and fluffy. Add eggs one at a time, mixing on low speed. Stir in sour cream and vanilla until just combined.
- Pour the cheesecake filling over the cooled crust. Drop spoonfuls of strawberry sauce on top and swirl gently with a knife or skewer to create a marbled pattern.
- Bake for 55–65 minutes, or until the center is just set and the edges are slightly puffed. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour. Then transfer to the fridge to chill for at least 4 hours or overnight.
- Run a knife around the edges before removing the springform ring. Slice and serve chilled.
