Sweet Potato Filling

- 1/2 cup (120ml) milk
- 1 cup (225g) packed light brown sugar
- 1/4 cup (56g) unsalted butter, melted
- 2 eggs
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 tsp vanilla extract
- Pinch of salt
Streusel Topping
- 1/3 cup (44g) all purpose flour
- 1/3 cup (75g) light brown sugar, packed
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- Pinch of ground cloves
- 3 tbsp (42g) salted butter, melted
Additional Topping
- 2–3 cups marshmallows
Instructions
- Preheat oven: Preheat your oven to 350°F (176°C) to prepare for baking the casserole.
- Cook sweet potatoes: Place the peeled and cubed sweet potatoes in a large pot, cover them with water, and bring to a boil. Cook until the potatoes are fork-tender, about 8 minutes. Drain the water and transfer the sweet potatoes to a mixing bowl.
- Mash potatoes: Mash the sweet potatoes until smooth or to your preferred consistency, ensuring there are no large chunks for a creamy texture.
- Mix filling: Add milk, brown sugar, melted unsalted butter, eggs, ground cinnamon, ground nutmeg, vanilla extract, and a pinch of salt to the mashed sweet potatoes. Stir well to combine all ingredients into a uniform filling.
- Transfer to baking dish: Pour the sweet potato filling into a 9×13-inch casserole dish, spreading it evenly. At this point, you can refrigerate the mixture for up to 2 days if needed, or proceed immediately.
- Bake initially: Bake the casserole uncovered in the preheated oven for 25-30 minutes until it is heated through and begins to set.
- Prepare streusel topping: In a separate bowl, combine all purpose flour, light brown sugar, ground cinnamon, ground nutmeg, and ground cloves. Stir in the melted salted butter until the mixture becomes crumbly.
- Finish baking: Remove the casserole from the oven and evenly sprinkle marshmallows over the top, followed by the streusel crumb mixture. Optionally, add more marshmallows on top. Return the casserole to the oven and bake an additional 10-15 minutes until the topping is bubbly and browned. For extra browning on the marshmallows, broil at 400°F briefly until golden. Serve warm.
