Instructions
- Prepare the Vegetables: Peel and dice the sweet potatoes. Chop the onion and dice the carrots and celery. Mince the garlic cloves to have all ingredients ready for cooking.
- Rinse Lentils: Thoroughly rinse the green lentils under cold running water and set them aside to drain.
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and celery. Cook the vegetables for 5 to 7 minutes, stirring occasionally until they become soft and fragrant. Stir in minced garlic, ground cumin, and ground coriander, cooking for an additional 1 to 2 minutes to release the spices’ aroma.
- Add Main Ingredients and Simmer: Add the diced sweet potatoes and rinsed lentils to the pot. Pour in the vegetable broth. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low, cover with a lid, and let it simmer gently for 25 to 30 minutes until the lentils and sweet potatoes are tender.
- Blend the Soup (Optional): For a creamier texture, use an immersion blender directly in the pot or transfer portions of the soup to a regular blender. Blend until smooth. If using a regular blender, allow the soup to cool slightly before blending in batches to avoid splattering.
