Meat Filling
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1/3 cup water

- 24 wonton wrappers
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup diced tomatoes, drained
- 1/4 cup sliced black olives
- 1/4 cup chopped green onions
- Sour cream, for serving
- Salsa, for serving
Instructions
- Preheat and prepare wonton shells: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin. Press one wonton wrapper firmly into each cup forming a small shell. Bake in the oven for 5 minutes until they are slightly crisp but not browned.
- Cook the meat filling: While the wonton shells bake, heat olive oil in a skillet over medium heat. Add the finely chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and sauté for 1 minute until fragrant.
- Brown the beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook until fully browned and no longer pink in the center, about 7-8 minutes. Drain any excess grease from the pan.
- Simmer with seasoning: Stir in the taco seasoning packet and 1/3 cup water. Reduce heat and simmer for 3 to 5 minutes until the mixture thickens and coats the beef evenly.
- Assemble the taco bites: Spoon the seasoned beef mixture evenly into each pre-baked wonton shell. Top each with shredded cheddar and mozzarella cheese, diced tomatoes, and sliced black olives.
- Bake to melt cheese: Return the filled mini muffin tin to the oven and bake for 8 to 10 minutes, or until the cheese is melted, bubbly, and slightly golden.
- Garnish and serve: Remove from oven and let the taco bites cool slightly. Sprinkle with chopped green onions and serve warm with sour cream and salsa on the side.
