- 2 cans refrigerated biscuit dough (about 16 ounces total)

Instructions
- Preheat and Prepare Muffin Pan: Preheat the oven to 375°F and lightly grease a mini muffin pan to prevent sticking and ensure easy removal of the bites.
- Sauté Onions: Heat olive oil in a skillet over medium heat. Add the finely diced onion and cook for about 3 minutes until softened and translucent, enhancing flavor for the beef mixture.
- Cook Ground Beef: Add the ground beef to the skillet and cook while breaking it apart, stirring frequently until the beef is fully browned. Drain any excess grease to prevent sogginess.
- Season Beef: Stir in the taco seasoning packet and 1/3 cup water. Simmer the mixture for 3 to 4 minutes until thickened to deepen the flavor.
- Mix in Cheese and Ranch: Remove skillet from heat and let the beef mixture cool slightly. Then stir in the ranch dressing and shredded cheddar cheese to create a creamy, cheesy filling.
- Prepare Biscuit Dough Cups: Separate each biscuit and cut them in half. Press each piece firmly into the mini muffin cups to create small dough cups forming the base and shell of the taco bites.
- Fill and Bake: Spoon the beef mixture evenly into each biscuit dough cup. Bake in the preheated oven for 12 to 15 minutes, or until the biscuit dough is golden brown and fully cooked through.
- Add Toppings and Serve: Remove the bites from the pan carefully. Top each with diced tomatoes and chopped green onions. Serve warm with optional sour cream, salsa, or extra ranch dressing for dipping.
