  • 1 cup cheddar cheese, shredded
  • 1 avocado, diced
  • 1/2 cup taco sauce (store-bought or homemade)

Instructions

  1. Cook the Rice: Prepare the rice according to package instructions until tender and fluffy. Set aside and keep warm for layering.
  2. Cook the Ground Beef: Heat olive oil in a large skillet over medium heat. Add the ground beef, season with salt, pepper, and optional taco seasoning. Cook until browned and fully cooked, breaking it apart as it cooks.
  3. Heat the Black Beans: In a small saucepan, warm the drained and rinsed black beans over medium heat for about 5 minutes until heated through.
  4. Assemble the Bowl: In a large bowl, layer the cooked rice at the bottom. Next, add the cooked ground beef evenly over the rice.
  5. Add Remaining Toppings: Spoon the warmed black beans, corn, and drained diced tomatoes on top of the beef layer. Then add the shredded lettuce, shredded cheddar cheese, diced avocado, and finally drizzle the taco sauce over everything.
