Tater Tots:
- 4 cups frozen tater tots
- 1 tbsp olive oil
Scrambled Eggs:
- 6 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
Toppings:
- 1 cup cooked breakfast sausage or bacon crumbles
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/2 avocado, sliced
- 2 tbsp chopped green onions
- Hot sauce for serving (optional)
Instructions
- Preheat Oven: Preheat oven to 425°F. Spread tater tots on a baking sheet, drizzle with olive oil, and bake for 25–30 minutes until golden and crispy, flipping halfway through.
- Prepare Eggs: Whisk eggs, milk, salt, and pepper in a bowl. Scramble eggs in a skillet over medium heat until just set. Remove from heat.
- Assemble Bowls: Divide tater tots among four bowls. Top with scrambled eggs, sausage or bacon, cheddar cheese, tomatoes, avocado slices, and green onions. Serve hot with hot sauce if desired.
Notes
- You can substitute sweet potato tots for a slightly healthier twist.
- This recipe is also great with sautéed peppers and onions for extra flavor.
