This Tater Tot Breakfast Bowl is a hearty and delicious way to start your day, featuring crispy tater tots topped with scrambled eggs, cheese, breakfast meats, and fresh veggies.

Tater Tots:

  • 4 cups frozen tater tots
  • 1 tbsp olive oil

Scrambled Eggs:

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Toppings:

  • 1 cup cooked breakfast sausage or bacon crumbles
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • 1/2 avocado, sliced
  • 2 tbsp chopped green onions
  • Hot sauce for serving (optional)

Instructions

  1. Preheat Oven: Preheat oven to 425°F. Spread tater tots on a baking sheet, drizzle with olive oil, and bake for 25–30 minutes until golden and crispy, flipping halfway through.
  2. Prepare Eggs: Whisk eggs, milk, salt, and pepper in a bowl. Scramble eggs in a skillet over medium heat until just set. Remove from heat.
  3. Assemble Bowls: Divide tater tots among four bowls. Top with scrambled eggs, sausage or bacon, cheddar cheese, tomatoes, avocado slices, and green onions. Serve hot with hot sauce if desired.

Notes
