Ingredients

Scale

For the Casserole:

  • 1 tablespoon olive oil
  • 1 lb breakfast sausage (pork or turkey)
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheddar cheese, divided
  • 1 (28 oz) bag frozen tater tots

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the sausage: In a large skillet, heat olive oil and cook the sausage until browned. Add onions and bell pepper, cook until softened.
  3. Prepare the egg mixture: In a bowl, whisk eggs, milk, garlic powder, salt, and pepper. Stir in 1 1/2 cups of cheese.
  4. Assemble the casserole: Spread sausage mixture in the baking dish. Pour egg mixture over it. Layer tater tots on top and sprinkle with remaining cheese.
  5. Bake: Bake for 40-45 minutes until set and golden brown. Let cool before serving.

Notes

  • You can prep this casserole the night before and bake it in the morning.
  • Customize with spinach, mushrooms, or jalapeños for added flavor.
