- 8 large eggs

- 1/4 teaspoon black pepper
- 2 cups shredded cheddar cheese, divided
- 1 (28 oz) bag frozen tater tots
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook the sausage: In a large skillet, heat olive oil and cook the sausage until browned. Add onions and bell pepper, cook until softened.
- Prepare the egg mixture: In a bowl, whisk eggs, milk, garlic powder, salt, and pepper. Stir in 1 1/2 cups of cheese.
- Assemble the casserole: Spread sausage mixture in the baking dish. Pour egg mixture over it. Layer tater tots on top and sprinkle with remaining cheese.
- Bake: Bake for 40-45 minutes until set and golden brown. Let cool before serving.
