Scale
Dry Ingredients
- 1 cup rolled oats
- 1/2 cup vanilla or unflavored protein powder
- 1/2 cup almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Wet Ingredients
- 1/3 cup natural peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons milk of choice
Add-ins
- 1/3 cup dark chocolate chips
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, protein powder, almond flour, baking soda, and salt. Stir well to evenly distribute all the dry components.
- Mix Wet Ingredients: In a separate bowl, whisk together the natural peanut butter, honey or maple syrup, unsweetened applesauce, egg, vanilla extract, and milk until the mixture is smooth and well combined.
- Combine Wet and Dry: Pour the wet ingredients into the bowl with the dry ingredients. Stir thoroughly until a thick, sticky dough forms, ensuring all the flour and protein powder are fully incorporated.
- Add Chocolate Chips: Fold the dark chocolate chips gently into the dough for bursts of rich chocolate in every bite.
- Form Cookies: Using a tablespoon measure, scoop out dough portions onto the prepared baking sheet, spacing them evenly. Gently flatten each dough ball to create cookie shapes, about 1/2 inch thick.
- Bake: Bake the cookies in the preheated oven for 8 to 10 minutes, or until the edges are set but the centers remain soft.
- Cool: Let the cookies cool on the baking sheet for 5 minutes to firm up, then transfer them to a wire rack to cool completely before serving.
Notes
- Use plant-based protein powder if you want a dairy-free version.
- Adjust the sweetness depending on whether you use honey or maple syrup and the type of protein powder.
- The cookies will be soft and slightly chewy, not crispy.
