Tortellini Caprese Salad:

  • 20 oz cheese tortellini, cooked and cooled
  • 1 pint cherry tomatoes, halved
  • 8 oz fresh mozzarella balls (bocconcini or ciliegine), halved
  • 1/4 cup fresh basil leaves, chopped or torn
  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the Tortellini: Cook the tortellini according to the package instructions, then drain and rinse under cold water to cool completely.
  2. Combine Ingredients: In a large bowl, combine the cooked tortellini, halved cherry tomatoes, mozzarella balls, and basil.
  3. Add Dressing: Drizzle with olive oil and red wine vinegar, and season with salt and pepper to taste. Toss gently until everything is well coated.
  4. Chill and Serve: Chill for at least 30 minutes before serving for best flavor. Just before serving, drizzle with balsamic glaze and give a final toss.

Notes
