Tortellini Caprese Salad:
- 20 oz cheese tortellini, cooked and cooled
- 1 pint cherry tomatoes, halved
- 8 oz fresh mozzarella balls (bocconcini or ciliegine), halved
- 1/4 cup fresh basil leaves, chopped or torn
- 2 tablespoons balsamic glaze
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and freshly ground black pepper to taste
Instructions
- Cook the Tortellini: Cook the tortellini according to the package instructions, then drain and rinse under cold water to cool completely.
- Combine Ingredients: In a large bowl, combine the cooked tortellini, halved cherry tomatoes, mozzarella balls, and basil.
- Add Dressing: Drizzle with olive oil and red wine vinegar, and season with salt and pepper to taste. Toss gently until everything is well coated.
- Chill and Serve: Chill for at least 30 minutes before serving for best flavor. Just before serving, drizzle with balsamic glaze and give a final toss.
Notes
