Description

Delight in these Triple Berry Cobbler Bars, a perfect blend of buttery crumbly crust and a luscious mix of fresh or frozen berries. Baked to golden perfection with a sweet sugar topping, these bars are an irresistible American dessert ideal for summer gatherings or anytime you crave a fruity treat.

Ingredients

Scale

Crust and Topping

  • 1 cup unsalted butter, melted and cooled slightly
  • 1 cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons granulated sugar (for topping)

Berry Filling

  • 3 cups mixed berries (blueberries, raspberries, and blackberries; fresh or frozen)
  • 2 teaspoons cornstarch
  • 2 tablespoons lemon juice

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, ensuring some overhang on the sides to easily lift out the bars later.
  2. Make the Dough: In a large bowl, whisk together the melted butter, granulated sugar, light brown sugar, and vanilla extract until the mixture is smooth and creamy. Add the all-purpose flour, baking powder, and salt, stirring until a crumbly dough forms.
  3. Form the Base Layer: Press about two-thirds of this dough evenly into the bottom of the prepared baking pan to form a solid crust layer.
  4. Prepare Berry Filling: In a separate bowl, gently toss the mixed berries with cornstarch and lemon juice to coat the berries and help thicken the filling during baking.
  5. Assemble the Bars: Spread the berry mixture evenly over the dough in the pan. Then crumble the remaining dough over the berries, creating a crumb topping.
  6. Add Sugar Topping: Sprinkle the top evenly with 2 tablespoons of granulated sugar to enhance the crispness and sweetness.
  7. Bake: Bake the assembled bars for 38 to 42 minutes or until the top turns golden brown and the berry filling is bubbling.
  8. Cool and Slice: Allow the bars to cool completely in the pan to set the filling. Use the parchment overhang to lift them out and slice into 16 bars.

Notes

  • If using frozen berries, do not thaw before adding to prevent excess juice and sogginess.
  • You can substitute other berries or use a single type based on your preference.
  • Store bars in the refrigerator for up to 5 days to maintain freshness.
  • These bars freeze well if you want to keep them longer.
