Ingredients
Scale
Crust and Topping
- 1 cup unsalted butter, melted and cooled slightly
- 1 cup granulated sugar
- ½ cup packed light brown sugar
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 tablespoons granulated sugar (for topping)
Berry Filling
- 3 cups mixed berries (blueberries, raspberries, and blackberries; fresh or frozen)
- 2 teaspoons cornstarch
- 2 tablespoons lemon juice
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, ensuring some overhang on the sides to easily lift out the bars later.
- Make the Dough: In a large bowl, whisk together the melted butter, granulated sugar, light brown sugar, and vanilla extract until the mixture is smooth and creamy. Add the all-purpose flour, baking powder, and salt, stirring until a crumbly dough forms.
- Form the Base Layer: Press about two-thirds of this dough evenly into the bottom of the prepared baking pan to form a solid crust layer.
- Prepare Berry Filling: In a separate bowl, gently toss the mixed berries with cornstarch and lemon juice to coat the berries and help thicken the filling during baking.
- Assemble the Bars: Spread the berry mixture evenly over the dough in the pan. Then crumble the remaining dough over the berries, creating a crumb topping.
- Add Sugar Topping: Sprinkle the top evenly with 2 tablespoons of granulated sugar to enhance the crispness and sweetness.
- Bake: Bake the assembled bars for 38 to 42 minutes or until the top turns golden brown and the berry filling is bubbling.
- Cool and Slice: Allow the bars to cool completely in the pan to set the filling. Use the parchment overhang to lift them out and slice into 16 bars.
Notes
- If using frozen berries, do not thaw before adding to prevent excess juice and sogginess.
- You can substitute other berries or use a single type based on your preference.
- Store bars in the refrigerator for up to 5 days to maintain freshness.
- These bars freeze well if you want to keep them longer.
