Description

For the Turkey Enchilada Skillet:

  • 1 tablespoon olive oil
  • 1 lb ground turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (10 oz) red enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese
  • 6 small corn tortillas, cut into strips
  • Chopped fresh cilantro and sliced green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned and cooked through, about 5–7 minutes.
  2. Add the diced onion and cook until softened, then stir in the garlic, chili powder, cumin, paprika, salt, and pepper. Cook until fragrant.
  3. Stir in the enchilada sauce, black beans, and corn. Add the tortilla strips and combine. Sprinkle the shredded cheese over the top. Cover and cook until the cheese is melted and everything is heated through, about 5 minutes.
  4. Garnish with cilantro and green onions before serving hot.

Notes

  • You can substitute flour tortillas or crushed tortilla chips for a crunchy texture.
