  • 1 pound ground turkey
  • 1 large egg
  • ½ cup breadcrumbs

For the Mashed Sweet Potatoes:

  • 2 pounds sweet potatoes (peeled and chopped)
  • 3 tablespoons unsalted butter
  • ¼ cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat oven to 375°F (190°C).
  2. Sauté onion and garlic: In a small skillet, heat olive oil over medium heat and sauté the onion until softened. Add garlic and cook for 1 minute more. Set aside to cool slightly.
  3. Mix meatloaf ingredients: In a large mixing bowl, combine ground turkey, egg, breadcrumbs, milk, ketchup, Worcestershire sauce, thyme, salt, pepper, and the cooked onion-garlic mixture. Shape into a loaf and place on a lined or greased baking sheet. Spread ¼ cup ketchup over the top.
  4. Bake: Bake for 45–50 minutes or until internal temperature reaches 165°F (74°C).
  5. Cook sweet potatoes: Meanwhile, place chopped sweet potatoes in a large pot, cover with water, and bring to a boil. Cook for 15–20 minutes or until fork-tender. Drain and return to the pot.
  6. Mash sweet potatoes: Add butter, milk, salt, and pepper to the sweet potatoes, then mash until smooth and creamy.
  7. Serve: Serve slices of turkey meatloaf with a generous scoop of mashed sweet potatoes.
