Ingredients
Scale
Cookie Dough
- 1 cup salted butter, softened
- 2/3 cup granulated sugar
- 3 egg yolks
- 1 ½ teaspoons vanilla extract
- 2 ¼ cups (320 g) all-purpose flour
- ½ teaspoon salt
Caramel Topping
- 2 cups caramels, unwrapped (recommended Kraft caramels)
- 2 tablespoons heavy cream
Chocolate Drizzle
- 1 cup milk chocolate chips
- 1 teaspoon vegetable shortening or oil
Instructions
- Mix Butter and Sugar: In a large bowl using an electric handheld mixer or stand mixer, beat the softened butter and granulated sugar together until the mixture is fluffy and fully combined.
- Add Egg Yolks and Vanilla: Incorporate the egg yolks and vanilla extract into the butter-sugar mixture, mixing thoroughly and scraping down the sides of the bowl to ensure even blending.
- Combine Dry Ingredients: Add the all-purpose flour and salt to the wet mixture. Mix until the dough forms pea-sized crumbs, then use your clean hands to gather the dough into a cohesive ball.
- Shape Cookies: Divide the dough into small balls about 3 teaspoons each. Place them close together on parchment-lined baking sheets.
- Create Indentations: Press gently with your thumb to make a small indentation in each cookie ball. If the edges crack, press them together to maintain shape.
- Preheat and Bake: Preheat your oven to 375°F (190°C). Space the cookies about one inch apart on two large parchment-lined baking sheets. Bake for 10 to 11 minutes until they are set and lightly browned around the edges.
- Settle Centers: After baking, if the centers puff up, gently press them down once the cookies are slightly cooled. Allow cookies to cool completely on the pan.
- Melt Caramel: In a microwave-safe bowl, combine the unwrapped caramels and heavy cream. Microwave in 30-second increments, stirring after each, until caramel is just melted and smooth. Avoid overheating to prevent hardening later.
- Top with Caramel: Spoon melted caramel onto each cooled cookie, spreading to the edges with the back of the spoon. Let the caramel set and firm up for about 20 minutes at room temperature.
- Melt Chocolate: In a clean bowl, microwave the milk chocolate chips along with vegetable shortening or oil in 30-second increments until fully melted and smooth, stirring well.
- Drizzle Chocolate: Using a spoon, drizzle the melted chocolate generously over the caramel layer on each cookie.
- Set Chocolate and Serve: Allow the chocolate to fully set before serving. Enjoy your homemade Twix Cookies!
