Description

Traditional Ukrainian potato dumplings made from mashed potatoes and flour, filled with a potato filling, boiled until tender, and topped with sautéed onions in butter for a comforting and delicious meal.

Ingredients

Scale

Dumpling Dough

  • 2 cups mashed potatoes
  • 1 cup all-purpose flour
  • 1 egg
  • 1 teaspoon salt

Filling and Topping

  • 1 onion, finely chopped
  • 2 tablespoons butter

Instructions

  1. Prepare the dough: In a large bowl, combine the mashed potatoes, all-purpose flour, egg, and salt. Mix thoroughly until a smooth dough forms that is workable but not sticky.
  2. Roll and cut dough: Lightly flour a clean surface and roll out the dough evenly to about 1/8 inch thickness. Using a round cutter or glass, cut the dough into circles approximately 3 inches in diameter.
  3. Add filling: Place a small spoonful of the potato filling (reserve some mashed potatoes for filling) in the center of each dough circle, ensuring not to overfill to prevent leaking.
  4. Seal the dumplings: Fold each dough circle over the filling to form a semicircle. Press the edges firmly together and pinch to seal completely, preventing the filling from escaping during cooking.
  5. Boil the dumplings: Bring a large pot of salted water to a gentle boil. Carefully drop the dumplings into the water and cook until they float to the surface, usually 3-5 minutes. Remove with a slotted spoon and set aside.
  6. Sauté onions: In a skillet over medium heat, melt the butter. Add the finely chopped onion and sauté for about 5-7 minutes or until golden brown and fragrant.
  7. Serve: Place the boiled dumplings on plates and generously spoon the sautéed onions and butter over the top. Serve warm as a hearty main or side dish.

Notes

  • Ensure the dough is not too wet to avoid sticky dumplings.
  • You can add herbs like dill or parsley to the filling for extra flavor.
  • Serve with sour cream for an authentic Ukrainian experience.
  • Dumplings can be frozen before boiling; boil directly from frozen when ready to eat.
  • If dough is too sticky, add a little more flour as needed.
