  • 3 cups Coconut Water (Can substitute with regular water for a lighter taste.)
  • 2 tablespoons Agar Agar Powder (Vegan thickening agent, do not substitute with gelatin.)
  • 6 tablespoons Sugar (Adjust according to your taste.)
  • 1 cup Canned Lychee (Fresh lychees can be used for better flavor.)
  • 3 cups Coconut Water (Additional, for mixing in later step.)


Instructions

  1. Prepare Agar Mixture: Sprinkle the agar agar powder over 3 cups of cold coconut water in a mixing bowl. Stir well until the powder is evenly combined with the water.
  2. Heat the Mixture: Pour the mixture into a saucepan and heat over medium heat until it comes to a boil. Then reduce the heat to low and continue stirring for about 5 minutes to fully dissolve the agar agar.
  3. Add Sugar: Add 6 tablespoons of sugar to the hot mixture. Stir continuously until the sugar completely dissolves. Once dissolved, remove the saucepan from the heat.
  4. Combine with Coconut Water: Transfer the hot agar mixture into a baking dish and pour in another 3 cups of coconut water, mixing gently to combine.
  5. Add Lychee Pieces: Gently stir in the canned lychee pieces to evenly distribute them throughout the jelly mixture.
  6. Chill: Place the baking dish in the refrigerator and chill for at least 2 hours until the jelly is firm but still jiggly.
  7. Serve: Invert the jelly onto a cutting board and cut it into small cubes ready to serve.
