Description

This Walking Taco Casserole is a fun and flavorful twist on the classic walking taco. Layers of seasoned ground beef, enchilada sauce, creamy cheese, and crunchy Fritos are baked together to create a comforting and easy-to-make dish. Topped with fresh lettuce, tomatoes, salsa, and sour cream, this casserole is perfect for casual family dinners or game day gatherings.

Ingredients

Scale

Meat Mixture

  • 1 1⁄2 pounds Ground Beef
  • 1⁄3 large Onion, chopped
  • 1 can Green Chilies (small can)
  • 1 can Enchilada Sauce
  • 2 ounces Cream Cheese

Casserole Base

  • 1 bag Fritos Corn Chips
  • 1 bag Shredded Cheese

Toppings

  • 3⁄4 cup Lettuce, shredded
  • 1⁄2 cup Tomato, fresh, diced
  • 16 ounces Salsa
  • 8 ounces Sour Cream

Instructions

  1. Brown the Ground Beef and Onions: In a large skillet over medium heat, cook the ground beef with the chopped onion until the beef is fully cooked and the onions are tender. Drain excess fat if necessary.
  2. Combine the Meat Mixture: Stir in the green chilies, enchilada sauce, and cream cheese into the cooked beef mixture. Continue stirring until the cream cheese is fully melted and everything is well combined.
  3. Layer the Casserole: In a 9×13 inch baking dish, spread a layer of Fritos corn chips evenly on the bottom. Next, add the meat mixture in an even layer over the chips, then sprinkle the shredded cheese on top.
  4. Bake the Casserole: Preheat the oven to 350°F (175°C). Place the assembled casserole in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  5. Add Fresh Toppings and Serve: Remove the casserole from the oven and immediately top with shredded lettuce, diced fresh tomatoes, salsa, and sour cream. Serve hot for a delicious, fun meal.

Notes

  • For a spicier version, use hot enchilada sauce or add jalapeños.
  • You can substitute ground turkey or chicken for a leaner protein option.
  • Make sure to drain excess grease from the cooked beef to avoid a soggy casserole.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • For extra crunch, sprinkle additional Fritos on top just before serving.
