Description

A quick and flavorful Yaki Udon Noodle recipe featuring tender chicken, crisp bell peppers, and carrots stir-fried with chewy udon noodles in a savory soy and vegetable broth sauce. Perfect for a satisfying weeknight meal ready in just 30 minutes.

Ingredients

Scale

Main Ingredients

  • 8 oz udon noodles
  • 1 tbsp sesame oil (divided)
  • 1 cup boneless chicken breast (sliced)
  • 1 cup bell peppers (sliced)
  • 1 cup carrots (julienne)
  • 2 green onions (chopped)
  • 3 tbsp low-sodium soy sauce
  • 1/2 cup vegetable broth
  • 2 garlic cloves (minced)

Instructions

  1. Cook Udon Noodles: Cook the udon noodles according to the package instructions until tender. Drain well and set aside to prevent sticking.
  2. Cook Chicken: Heat half a tablespoon of sesame oil in a skillet over medium-high heat. Add the sliced chicken breast and cook for 5 to 7 minutes until browned and fully cooked through. Remove the chicken from the skillet and set aside.
  3. Stir-Fry Vegetables: In the same skillet, add the remaining sesame oil if needed. Stir-fry the bell peppers and julienned carrots for 3 to 4 minutes until they are tender yet retain a slight crunch.
  4. Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the cooked udon noodles, low-sodium soy sauce, and vegetable broth. Stir thoroughly to combine all ingredients and heat through evenly.
  5. Add Garlic and Garnish: Stir in the minced garlic during the last minute of cooking to infuse flavor. Remove the skillet from heat, garnish with chopped green onions, and serve hot for best taste.

Notes

  • Use low-sodium soy sauce to control the salt content of the dish.
  • You can substitute chicken with tofu or shrimp for variations.
  • Julienne carrots ensure even cooking and a nicer texture.
  • Be careful not to overcook vegetables; keeping them slightly crunchy adds a good contrast to the soft noodles.
  • Use fresh garlic and green onions to maximize flavor freshness.
