Perfectly balanced with a tangy citrus dressing, this salad offers a light yet satisfying blend of flavors and textures that make it an ideal choice for a healthy lunch or dinner.

Ingredients

Scale

Shrimp

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Salad

  • 4 cups mixed salad greens
  • 1 large avocado, diced
  • 1 orange, peeled and segmented
  • 1/2 grapefruit, peeled and segmented
  • 1/4 red onion, thinly sliced
  • 1/4 cup cucumber, sliced
  • 2 tablespoons fresh cilantro, chopped

Dressing

  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh orange juice
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the Shrimp: Heat 1 tablespoon of olive oil in a skillet over medium heat. Season the shrimp with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook the shrimp for 2 to 3 minutes on each side until they turn pink and are fully cooked. Remove the shrimp from the pan and let them cool slightly.
  2. Prepare the Salad Base: In a large bowl, combine 4 cups of mixed salad greens, diced avocado, orange segments, grapefruit segments, thinly sliced red onion, sliced cucumber, and chopped fresh cilantro. Toss gently to mix.
  3. Make the Dressing: In a small bowl, whisk together the fresh lime juice, fresh orange juice, honey, olive oil, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well combined and smooth.
  4. Assemble the Salad: Add the cooked shrimp to the bowl with the salad ingredients. Drizzle the freshly made dressing over the salad and gently toss to evenly coat all the ingredients.
  5. Serve: Serve the salad immediately to enjoy its fresh and vibrant flavors at their best.

Notes

  • Use freshly squeezed citrus juices for the most vibrant and authentic flavor.
  • Substitute arugula or spinach for the mixed greens if preferred for a different flavor profile.
  • Add toasted almonds or pumpkin seeds to the salad just before serving for added crunch and texture.
