Instructions
- Prepare Jalapeños: Rinse the jalapeño peppers under cold water and pat them dry. Carefully slice each jalapeño in half lengthwise, removing the stems, membranes, and seeds to reduce heat and create space for stuffing.
- Make Cheese Filling: In a medium bowl, thoroughly mix the room temperature cream cheese with the shredded cheddar cheese until a smooth, creamy filling forms.
- Stuff Jalapeños: Spoon the cheese mixture into the hollowed halves of each jalapeño and press the halves back together to enclose the filling completely.
- Encapsulate with Sausage: Divide the pork sausage into six equal portions. Flatten each portion and wrap it fully around a stuffed jalapeño half, pinching the sausage carefully to seal all edges and completely cover the cheese-stuffed jalapeño.
- Wrap with Bacon: Wrap each sausage-covered jalapeño with two slices of thick-cut bacon, ensuring full coverage for flavor and crispiness. Secure the bacon with toothpicks to keep everything in place during cooking.
