Description

A fresh and vibrant Asian Chicken Salad combining shredded chicken, crisp napa cabbage, romaine lettuce, and colorful vegetables, all tossed in a flavorful sesame dressing and topped with crunchy almonds and chow mein noodles. Perfect for a quick, healthy lunch or light dinner.

Ingredients

Scale

Salad

  • 2 cups cooked chicken breast, shredded or chopped
  • 4 cups napa cabbage, thinly sliced
  • 2 cups romaine lettuce, chopped
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup mandarin oranges, drained
  • 1/2 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1/2 cup sliced almonds, toasted
  • 1/2 cup crispy chow mein noodles
  • 1 tablespoon sesame seeds

Dressing

  • 1/4 cup rice vinegar
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced

Instructions

  1. Make the dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, lime juice, grated ginger, and minced garlic until fully combined to create a flavorful sesame dressing.
  2. Combine the salad ingredients: In a large mixing bowl, add the napa cabbage, romaine lettuce, shredded carrots, red bell pepper, mandarin oranges, green onions, and cilantro. Toss these ingredients gently to mix.
  3. Add the chicken: Incorporate the cooked shredded or chopped chicken into the bowl with the vegetables and toss gently until combined.
  4. Toss with dressing: Pour the prepared dressing over the salad mixture and toss everything until the salad is evenly coated with the dressing.
  5. Add toppings and serve: Just before serving, top the salad with toasted sliced almonds, crispy chow mein noodles, and sprinkle with sesame seeds for added texture and flavor.

Notes

  • Rotisserie chicken works well for this recipe and saves time.
  • For extra crunch, add the chow mein noodles just before serving.
  • Substitute peanut butter in the dressing for a creamier variation.
