Description

These BBQ Chicken Nachos combine crispy white corn tortilla chips loaded with shredded barbecue chicken, melted mozzarella and cheddar cheese, and topped with fresh red onion, cilantro, and optional toppings like diced tomato, pickled jalapenos, and ranch dressing for a flavorful and satisfying appetizer or snack.

Ingredients

Scale

Main Ingredients

  • 1 large bag (18 ounces) white corn tortilla chips
  • 1-pound cooked, shredded chicken
  • 1 bottle (18 ounces) barbecue sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups shredded Mozzarella cheese
  • 2 cups shredded mild cheddar cheese
  • ¼ cup finely diced red onion
  • 2 Tablespoons chopped cilantro

Optional Toppings

  • 1 Roma tomato, chopped
  • Pickled jalapeno slices
  • Ranch dressing or sour cream

Instructions

  1. Preheat and prepare chips: Preheat your oven to 375 degrees Fahrenheit. Line a large baking sheet with parchment paper and evenly spread out the white corn tortilla chips onto the sheet. Set this aside while you prepare the chicken topping.
  2. Season and mix chicken: In a large bowl, combine the cooked shredded chicken with garlic powder, onion powder, salt, and pepper. Pour desired amount of barbecue sauce over the chicken and stir thoroughly to coat the meat evenly.
  3. Assemble nachos: Evenly distribute the barbecue chicken mixture over the tortilla chips on the baking sheet. Then, sprinkle the shredded mozzarella and cheddar cheeses over the chicken layer. Finally, scatter the finely diced red onion on top for added flavor and texture.
  4. Bake and garnish: Place the baking sheet in the preheated oven and bake for about 12 minutes, or until the cheese has melted and become bubbly. Remove carefully from the oven and immediately top the nachos with chopped cilantro, diced Roma tomato, pickled jalapeno slices, and any additional toppings you like such as ranch dressing or sour cream. Serve warm and enjoy!

Notes

  • Adjust the amount of barbecue sauce based on your preferred flavor intensity and moisture level.
  • For a spicier variation, increase the amount of jalapeno slices or opt for a spicy barbecue sauce.
  • To keep the tortilla chips crispier, you can layer some chips after adding cheese instead of piling everything on at once.
  • These nachos are best served fresh out of the oven to enjoy the melty cheese and crisp chips together.
  • Use a combination of mozzarella and mild cheddar for a balanced cheesy flavor and good melting quality.
