Beef Filling

Instructions
- Prepare the beef mixture: Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant. Add the lean ground beef to the skillet and cook until browned, breaking it apart with a spoon. Drain any excess grease if necessary. Stir in the taco seasoning, tomato sauce, and water, and simmer the mixture for 5 minutes until thickened and flavorful.
- Warm the tortillas: Slightly warm the flour tortillas to make them pliable and easier to fold. You can heat them in a dry skillet over medium-low heat or wrap them in a damp cloth and microwave for about 20 seconds.
- Assemble the burritos: Lay a warmed tortilla flat and place a portion of cooked rice and black beans in the center. Add a generous scoop of the seasoned beef mixture, followed by shredded cheddar cheese, sour cream, salsa, shredded lettuce, diced tomato, and if desired, fresh cilantro.
- Fold and roll: Fold in the sides of the tortilla and roll it tightly from the bottom up to enclose the filling completely, forming a burrito.
