Beef Marinade

- 8 ounces mushrooms, quartered

Instructions
- Prepare Beef: In a bowl, combine the thinly sliced ribeye steak with baking soda, cornstarch, and soy sauce. Mix well to coat the beef evenly and set aside to marinate briefly while preparing other ingredients.
- Make Sauce: In a separate bowl, whisk together oyster sauce, low-sodium soy sauce, dark soy sauce, sugar, rice vinegar, and sesame oil until smooth and well combined.
- Heat Oil and Cook Beef: Heat olive oil in a large skillet or wok over high heat until shimmering. Add the marinated beef, spreading it out in a single layer. Let it sear undisturbed for 2 minutes to develop a caramelized crust, then stir-fry until the beef is browned but not overcooked.
- Add Aromatics: Add minced garlic, sliced onion, and julienned ginger to the skillet with the beef. Stir-fry together for about 1 minute until fragrant and the onion begins to soften.
- Cook Mushrooms: Stir in the quartered mushrooms and continue cooking until they are slightly softened, about 2-3 minutes.
- Combine Sauce and Finish Cooking: Pour the prepared stir-fry sauce over the beef and vegetables. Stir-fry thoroughly to coat everything evenly, allowing the sauce to thicken slightly and cling to the ingredients, about 2 minutes.
- Garnish and Serve: Remove from heat, garnish with sliced green onions, and serve immediately with steamed rice or noodles for a complete meal.
