  2. Make Sauce: In a separate bowl, whisk together oyster sauce, low-sodium soy sauce, dark soy sauce, sugar, rice vinegar, and sesame oil until smooth and well combined.
  3. Heat Oil and Cook Beef: Heat olive oil in a large skillet or wok over high heat until shimmering. Add the marinated beef, spreading it out in a single layer. Let it sear undisturbed for 2 minutes to develop a caramelized crust, then stir-fry until the beef is browned but not overcooked.
