Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt & pepper, to taste
Blueberry Thyme Sauce
- 1 cup fresh blueberries
- 2 tbsp honey
- 2 tbsp balsamic vinegar
- 1 tbsp fresh thyme leaves (plus extra for garnish)
- 2 cloves garlic, minced
- ½ cup chicken broth
- 1 tbsp butter
Instructions
- Prepare the chicken: Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper to enhance the flavor and help achieve a beautiful sear.
- Sear the chicken: Heat the olive oil in a skillet over medium-high heat. Place the chicken breasts in the skillet and sear each side for 4–5 minutes until they develop a golden-brown crust and are cooked through, reaching an internal temperature of 165°F (74°C). Once cooked, remove the chicken from the skillet and set aside.
- Make the blueberry thyme sauce: Using the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then stir in the fresh blueberries, honey, balsamic vinegar, fresh thyme leaves, and chicken broth. Let the sauce simmer for 5–6 minutes, allowing the blueberries to soften and the mixture to thicken slightly into a rich, flavorful sauce.
- Finish the dish: Stir in the butter to give the sauce a silky smooth texture. Return the cooked chicken breasts to the skillet, spooning the sauce over them. Cook everything together for an additional 1–2 minutes so the flavors meld beautifully.
- Serve: Plate the chicken breasts and generously drizzle them with the remaining blueberry thyme sauce. Garnish with extra fresh thyme leaves for added aroma and presentation. This dish pairs wonderfully with rice, mashed potatoes, or roasted vegetables.
Notes
- Use fresh blueberries for the best flavor, but frozen blueberries can be substituted in a pinch.
- Ensure the chicken is cooked to at least 165°F (74°C) for safety.
- For extra tang, add a splash more balsamic vinegar to the sauce.
- This recipe can be doubled easily for larger gatherings.
- Leftover chicken can be refrigerated for up to 3 days and reheated gently.
