Description

This hearty Cabbage Roll Soup captures all the comforting flavors of classic cabbage rolls in a warm, satisfying soup. Made with ground beef or turkey, fresh vegetables, fragrant herbs, and rice, this slow-cooked dish is perfect for cozy meals and easy to prepare in a crockpot.

Ingredients

Scale

Protein

  • 1 lb (450 g) ground beef or turkey

Vegetables & Aromatics

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups shredded cabbage
  • 1 medium carrot, diced

Liquids & Canned Goods

  • 4 cups vegetable or beef broth
  • 1 can (14 oz) diced tomatoes

Grains

  • ½ cup uncooked rice

Spices & Seasonings

  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Brown the meat: In a skillet over medium heat, cook the ground beef or turkey until fully browned and crumbled. This step ensures the meat is cooked evenly and releases its flavor.
  2. Transfer to crockpot: Move the browned meat into the crockpot or slow cooker to prepare for slow simmering.
  3. Add remaining ingredients: Add the chopped onion, minced garlic, broth, diced tomatoes, shredded cabbage, diced carrot, uncooked rice, dried oregano, smoked paprika, salt, and pepper to the crockpot with the meat.
  4. Cook slowly: Cover the crockpot and cook on low heat for 7–8 hours or on high heat for 3–4 hours until the cabbage is tender and the rice is fully cooked.
  5. Stir and serve: Before serving, stir the soup well to combine all flavors. Garnish with fresh parsley if desired for a burst of freshness.

Notes

  • You can substitute ground beef with ground turkey or a mix to make it leaner.
  • For a gluten-free version, ensure the broth is gluten-free.
  • If you prefer a thicker soup, reduce the broth quantity slightly.
  • Adjust spices and seasoning according to your taste preferences.
  • This soup can be frozen for up to 3 months; thaw before reheating.
